Meatballs
- 240 g Lamb Mince
- 1 whole Egg
- 1 clove Garlic (crushed)
- 1 tbsp Almond Meal
- 0.25 tsp Dried Oregano
- 0.50 tsp Salt (Himalayan or celtic)
- 0.25 tsp Black Pepper
Greek Salad
- 60 g Cherry Tomatoes
- 40 g Cucumber (diced)
- 1 tbsp Mint (fresh, finely chopped)
- 7.50 ml Lemon Juice
- 15 ml Flaxseed Oil
- 2 g Salt and Pepper (to season)
Tzatziki Dressing
- 30 g Yoghurt (Plain)
- 20 g Cucumber (grated)
- 0.50 clove Garlic (crushed)
- 2.50 ml Lemon Juice
- 2 g Salt and Pepper (to season)
Instructions
- 1. Meatballs
- 2. Combine all meatball ingredients together and roll into little balls.
- 3. Fry meatballs in a pan on medium to high heat for 4-5 minutes, or until browned all over. Set aside.
- 4. Tzatziki Dressing:
- 5. Mix all dressing ingredients and set aside.
- 6. Greek Salad:
- 7. Halve cherry tomatoes and grate cucumber.
- 8. In a separate bowl, mix lemon juice and oil together. Add mint leaves and pour over tomatoes and cucumber.
- 9. Serve meatballs with salad.
- 10. Either pour the dressing over the meatballs or use as a dipping sauce to serve.
