Meatballs

  • 240 g Lamb Mince
  • 1 whole Egg
  • 1 clove Garlic (crushed)
  • 1 tbsp Almond Meal
  • 0.25 tsp Dried Oregano
  • 0.50 tsp Salt (Himalayan or celtic)
  • 0.25 tsp Black Pepper

Greek Salad

  • 60 g Cherry Tomatoes
  • 40 g Cucumber (diced)
  • 1 tbsp Mint (fresh, finely chopped)
  • 7.50 ml Lemon Juice
  • 15 ml Flaxseed Oil
  • 2 g Salt and Pepper (to season)

Tzatziki Dressing

  • 30 g Yoghurt (Plain)
  • 20 g Cucumber (grated)
  • 0.50 clove Garlic (crushed)
  • 2.50 ml Lemon Juice
  • 2 g Salt and Pepper (to season)

Instructions

  • 1. Meatballs
  • 2. Combine all meatball ingredients together and roll into little balls.
  • 3. Fry meatballs in a pan on medium to high heat for 4-5 minutes, or until browned all over. Set aside.
  • 4. Tzatziki Dressing:
  • 5. Mix all dressing ingredients and set aside.
  • 6. Greek Salad:
  • 7. Halve cherry tomatoes and grate cucumber.
  • 8. In a separate bowl, mix lemon juice and oil together. Add mint leaves and pour over tomatoes and cucumber.
  • 9. Serve meatballs with salad.
  • 10. Either pour the dressing over the meatballs or use as a dipping sauce to serve.
