Ingredients
- 120 g Asparagus
- 0.50 tsp Chilli (fresh)
- 2 clove Garlic
- 1 tsp Lemon Zest
- 0.25 cup Parsley (fresh)
- 0.50 tsp Pepper (cracked)
- 120 g Rocket
- 240 g Seafood (Prawns)
- 250 g Slim Pasta Spaghetti
- 120 g Tomato
- 1 cube Vegetable stock
- 1 cup Water
Instructions
- 1. Place pasta in a bowl and cover with boiling water, set aside.
- 2. Heat an oil-sprayed non-stick frypan over moderate heat, add garlic, chilli and tomatoes and cook for a few minutes until tomatoes begin to soften.
- 3. Add asparagus, stock and water, cover and bring to boil.
- 4. Add prawns, cover again and bring to the boil, reduce the heat and simmer for 5 minutes.
- 5. Stir through drained pasta and rocket. Sprinkle with lemon zest, parsley and a squeeze of lemon and cracked black pepper to serve.
