Ingredients

  • 120 g Asparagus
  • 0.50 tsp Chilli (fresh)
  • 2 clove Garlic
  • 1 tsp Lemon Zest
  • 0.25 cup Parsley (fresh)
  • 0.50 tsp Pepper (cracked)
  • 120 g Rocket
  • 240 g Seafood (Prawns)
  • 250 g Slim Pasta Spaghetti
  • 120 g Tomato
  • 1 cube Vegetable stock
  • 1 cup Water

Instructions

  • 1. Place pasta in a bowl and cover with boiling water, set aside.
  • 2. Heat an oil-sprayed non-stick frypan over moderate heat, add garlic, chilli and tomatoes and cook for a few minutes until tomatoes begin to soften.
  • 3. Add asparagus, stock and water, cover and bring to boil.
  • 4. Add prawns, cover again and bring to the boil, reduce the heat and simmer for 5 minutes.
  • 5. Stir through drained pasta and rocket. Sprinkle with lemon zest, parsley and a squeeze of lemon and cracked black pepper to serve.
