Dressing

  • 2 tsp Flaxseed Oil
  • 2 tsp Apple Cider Vinegar
  • 2 g Salt and Pepper (to season)

Souvlaki

  • 60 g Beef Rump Steak (cut into 2cm cubes)
  • 40 g Brown Onion (cut into wedges)
  • 1 tbsp Olive Oil
  • 2 tsp Lemon Juice
  • 1 tsp Dried Oregano

Greek Salad

  • 30 g Tomato (cut into quarters)
  • 20 g Lebanese cucumber (chopped)
  • 10 g Red Onions
  • 10 g Green Capsicum (chopped)
  • 10 g Olives Kalamata
  • 15 g Cheese (Feta)
  • 0.50 tsp Dried Oregano (to season)

Instructions

  • 1. Souvlaki Skewers:
  • 2. Thread beef and onion alternatively on skewers, place souvlaki in a single layer, in a shallow dish.
  • 3. Combine oil, lemon juice and oregano in a jug, and pour over souvlaki. Then cover and refrigerate three hours or overnight.
  • 4. When ready to serve, grill or barbecue souvlaki skewers until browned all over.
  • 5. Greek Salad with Dressing :
  • 6. Combine all salad ingredients in a bowl and crumble feta on top.
  • 7. Make salad dressing by combining flaxseed oil, apple cider vinegar, salt and pepper.
  • 8. Serve souvlaki skewers with Greek salad on the side. Dress with salad dressing.
