Ingredients

  • 50 g Almonds (chopped)
  • 1 tbsp Coriander (fresh)
  • 60 g Grape Tomatoes (halved)
  • 40 g Lebanese cucumber (sliced diagonally)
  • 1 tbsp Mint
  • 125 g Slim Noodles (wok ready)

Dressing

  • 1 tbsp Lemongrass (stalk)
  • 1 pod Red Chilli (finely chopped)
  • 5 ml Lemon Juice
  • 5 ml Lime Juice

Instructions

  • 1. Dressing:
  • 2. Whisk lemongrass, chilli, lemon and lime juice together
  • 3. Thai Noodle Salad:
  • 4. Prepare the Slim noodles as per packet directions, drain and place in a bowl.
  • 5. Add cucumber, tomato, mint and coriander to noodles
  • 6. Toss gently to combine, sprinkle almonds over and serve.
  • 7. Pour dressing over noodle mixture.
