Ingredients
- 50 g Almonds (chopped)
- 1 tbsp Coriander (fresh)
- 60 g Grape Tomatoes (halved)
- 40 g Lebanese cucumber (sliced diagonally)
- 1 tbsp Mint
- 125 g Slim Noodles (wok ready)
Dressing
- 1 tbsp Lemongrass (stalk)
- 1 pod Red Chilli (finely chopped)
- 5 ml Lemon Juice
- 5 ml Lime Juice
Instructions
- 1. Dressing:
- 2. Whisk lemongrass, chilli, lemon and lime juice together
- 3. Thai Noodle Salad:
- 4. Prepare the Slim noodles as per packet directions, drain and place in a bowl.
- 5. Add cucumber, tomato, mint and coriander to noodles
- 6. Toss gently to combine, sprinkle almonds over and serve.
- 7. Pour dressing over noodle mixture.
